For sample Sunday, I decided to share a recipe. One Sunday morning, Isoken woke up to make a plantain frittata and rest. She had a big week coming up. But alas..here comes Tekena.
LOL. No, I’m not sharing what happened…just the recipe for this simple Nigerian breakfast.

I first saw this dish when one of my favorite Nigerian food bloggers, Zeelicious of Zeelicious Foods made it. So I’m going to share her recipe & video. Enjoy!
3 ripe plantains
3 table spoons olive oil
½ medium onion, thinly sliced
½ medium red bell pepper, cut in strips
½ medium green bell pepper, cut in strips
½ medium yellow bell pepper, cut in strips
2 fresh tomatoes, chopped
3 garlic cloves
¼ teaspoon curry powder
1/8 teaspoon thyme
1 seasoning cube
¼ teaspoon ground pepper
8 large eggs
1 cup chopped sausage
Salt to taste
Vegetable oil for frying the plantain
